![]() Ingredients: 1 1/2 c. granulated sugar 1 1/3 c. water 1 c. golden raisins 2 T. canola oil 3 large carrots grated 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. cloves 1 c. chopped walnuts 2 c. all-purpose flour 2 tsp. baking soda 1/2 tsp. salt 1 c. mixed glazed fruit Directions: combine the first five ingredients and spices together add to a small sauce pan. Over medium heat slowly bring to a boil the ingredients for 10 minutes. Cool thoroughly. Add remaining ingredients and mix well. Pre-heat the oven to 300 degrees. Pour the cake mixture into two round cake pans. Bake 1 1/2 hours. Cool then add frosting, cool-whip or ice-cream to the dessert.
