1 cup unsalted cold butter
3/4 cup brown sugar
1 1/2 cups all-purpose flour
1 1/2 cups quick oats
1 tsp. baking powder
1/2 tsp. salt
1 8oz. - 10oz. jar of strawberry preserves
Preheat oven to 350 degrees lightly spray a 9" x 11" baking pan
In a large bowl combine all ingredients except the jam. Use a pastry to knife to cut in cold butter, continue to combine until all ingredients are combined into small pieces. Pour half of the combined oatmeal onto the bottom of the pan and press down, then spread the strawberry preserves over the top and add the remaining oatmeal crumbles to the top of the bars. Bake at 350 degrees for 30-40 minutes until golden brown. Remove from the oven and cool for 30 minutes, cut into square bars, then serve or store in an airtight container.
